Ingredients:

GREEN PEAS - 1/2 CUP ( BOILED OR FROZEN)   CARROT - 1 SMALL CHOPPED   POTATO -1 SMALL CHOPPED FRENCH BEAN - 15 CHOPPED   CAULIFLOWER - 1 CUP CHOPPED CAPSICUM - 1 SMALL CHOPPED ONION -1 , TOMATO - 1 CASHEW NUT - 1.5  TBSP DRY RED CHILLI - 2 WHOLE CINNAMON STICKS - 2 BLACK PEPPER - 6 CLOVES - 2 CARDAMOM - 4 OIL - 1/2 CUP KASHMIRI RED CHILLI POWDER - 1 TSP SALT TO TASTE TURMERIC POWDER - 1/4 TSP GREEN CHILLY - 1 , SMALL GINGER , GARLIC -8- 10 (PASTE) JEERA - 1/2 TSP POPPY  SEEDS - 1 TSP CORIANDER SEEDS - 1 TSP SESAME SEEDS - 1 TSP KASOORI METHI - 1 TSP COCONUT POWDER - 2 TBSP   DRY COCONUT , FRESH COCONUT OR DESICATED COCONUT ANY TYPE.OF... 



 Let's start making sabji   Put a pan on gas with high flame   Add 2 cups of water Add all chopped vegetables for boil Except green peas Add salt to taste Mix them well So that salt gets mix well with vegetables Sabji is boiling now.

Let's start making kolhapuri masala and gravy Put a pan on gas   Turn on gas with high flame   Add coriander seeds Add jeera Add sesame seeds Add Poppy seeds Add Coconut powder ( fresh , desiccated or dry any type of coconut)  Mix them well Roast for 2 minutes with medium flame. Spices are roasted properly now  Coconut get changes its colour to light golden.

 Turn off gas Take out on mixer jar Grind them well   Make a smooth powder Powder is ready now take out powder into a bowl Put a pan on gas. Add 1 tsp oil I have Chopped onion and tomatoes Add chopped tomatoes and onion   Add whole spices Add cashew nuts Keep the flame medium.

Mix them well and roast for 2 to 3 minutes Onion and tomatoes are roasted well. Turn off the gas   Take out tomatoes and onion in mixer jar Grind them carefully because they are hot Or grind after it is cooled down. Paste is ready now.

Vegetables are boiled now properly.   Turn off the gas Take out water from sabji Let' fry sabji Put a wok on gas. Add 1/4 cup oil Add boiled vegetables.   Fry for 2 minutes   Sabji is almost fried Take out sabji in a plate   Add leftover oil When oil is hot Add ginger -green chilli - garlic paste.   Mix well and fry for 2 minutes so that raw taste of them is removed. 


Now they are fried well Add turmeric powder Bring down gas flame to low Add red chilly powder Add prepared gravy Mix well Add 1 cup of water mixer jar Stir and take out leftover paste from it. Bring up gas flame to high Stir gravy properly Turmeric and red chilly gives nice colour to gravy. Add prepared Kolhapuri masala.

Add salt to taste Mix well Let's add all vegetables Add green peas. Add all fried vegetables Mix well. Close lid and cook for 5 minutes. Check after 5 minutes Oil started separating from sabji Sabji is ready.

Turn off gas If wish, you can add cream Transfer to serving bowl   Delicious Veg Kolhapuri Sabji is ready. You can serve with Roti / Chapati / Puri / Paratha / Naan or Pulao. You sure try this recipe at home Give your feedback in comment below.
