To make urad dal khasta kachoris, firstly we will knead the dough with refined flour. Take 2 cups of refined flour in a bowl and add ½ tsp salt to it followed by 1/3 cup (75 grams) ghee. Mix everything really well. We have mixed ghee and salt into the flour really well. Now we will knead the dough. The water we are using for kneading the dough is chilled water.

Add water in small portions and knead a soft dough. We don't have to knead this dough too much to make it smooth. We just have to bind the flour together. Flour is now bound together. Soft dough is now ready. ½ cup of water has been used for kneading this much quantity of flour.
Here we have added ghee as moen but you can also add vegetable ghee i.e. dalda into it. Cover the dough and keep it aside for 15-20 minutes to set. After that, we will make kachoris. While the dough is fermenting, let's make the stuffing. For making stuffing, take ¼ cup (50 grams) urad dal and rinse it thoroughly with water. Soak it for 2 hours.
So, this is soaked urad dal. Now we will grind it into a coarse paste. Transfer the urad dal into a mixer jar. There is no need to add water to it. There is no need to add water to it. Urad dal is now grounded coarsely. Now we will prepare the stuffing. For this, heat a pan with 2 tbsp of oil. Allow it to heat aptly. Oil is now heated, add masala into it. Put the flame on low to avoid the burning of masala. After that, add ½ tsp cumin seeds, 1 tsp coriander powder and 1 tsp fennel powder into it. Saute the masala for a while. Now add ground urad dal into it along with ½ tsp salt, ¼ tsp red chilli powder, ¼ tsp ginger powder, ½ tsp dry mango powder, ¼ tsp garam masala and 1 pinch baking soda. Keep stirring the lentil paste continuously and roast until it releases nice aroma and turns out completely dry.
If it sticks on the pan then scrape it out with the help of spatula, like this. Now we have roasted the stuffing, it has now completely dried and turned golden brown and fragrant. Stuffing is now ready. Transfer it to a bowl and allow it to cool down completely. 20 minutes are over. Dough is fermented as well. Rub the dough slightly. Don't knead to make it smooth. Divide the dough into small balls.
You can size the kachoris little big or small as desired. We have divided the dough ball. Now we will stuff and prepare the kachoris. To stuff the kachoris, lift a dough ball and cover the rest of the dough balls. Shape the dough ball into a bowl with the help of the fingers, like this.
It is now done. Now place a tsp of stuffing on it. After that, close the stuffing. Very carefully lift the sides of the dough and close the stuffing, like this. Press it like this. Flatten it gently by placing it between the palms. We have flattened it. Kachoris is ready. Similarly, we will make the remaining kachoris. Here we have prepared 4 kachoris.
Now we will fry them. Oil for frying the kachoris is heated well. To check, drop a small pinch of dough ball into the hot oil. The dough has started to fry. For frying kachoris, we need medium hot oil. Oil has heated aptly. Drop the kachoris into the oil. Place as many kachoris as possible into the wok. Fry them on low-medium flame until they turn golden brown in colour. Meanwhile, stuff and prepare the rest of the kachoris.
Kachoris are fried from beneath, now flip their sides and let them fry from another side as well. Kachoris have turned golden brown in colour from both the sides. Now take them out. Lift the kachoris with a slotted ladle and hold it against the wok so that the excess oil gets drained back into the wok. Likewise, fry the rest of the kachoris. These kachoris have turned golden brown as well.
Take them out. Kachoris are now fried and with this much amount of dough we have prepared 9 kachoris. It takes 10-12 minutes to fry a batch of kachoris. Urad dal khasta kachoris are now ready. They have turned very crisp and delectable. Serve these kachoris along with green coriander chutney, tomato chutney or any chutney you like.
It is very easy to prepare urad dal kachoris but keep a note of a few things. While kneading the dough, add moen of ghee or vegetable ghee and knead the dough by adding chilled water. Don’t knead the dough too much to make it smooth, just bind the flour together.
After filling the kachoris close the stuffing really well. Make sure stuffing doesn’t spill out. Flatten it gently. Then fry them on low flame until they turn golden brown in colour. Your kachoris turn out super scrumptious.
