Hello and welcome to my blog, that is what we call it-Informative mind. . And Today in this this blog we will learn prepare a dish which is a little underestimated and a little underrated, Egg Curry. Yes, this is egg curry recipe at home.

In an Egg Curry the most important thing is that the eggs should be properly boiled. And to boil eggs, can sometimes really be difficult. So, first whenever we boil the eggs, we always get them to room temperature and then boil them. And not in boiling water, we rather place them in regular water first and then turn on the gas. There. 



Never cover the eggs while boiling because the boiling inside gets rigorous due to which they crack and you know the results. And for hard boiled eggs, 8-10 minutes are enough to boil. If you boil more than that, there will be a silver ring over the yolk Which clearly means it is over boiled. We will place the pan over here, because these are medium to large eggs they will require about to get hard-boiled.

 In the meantime, we prepare the curry. Some oil. First, we put a Bayleaf in this hot oil. Then goes Cumin. Give it a nice stir. In this, we add chopped Ginger, chopped Garlic and Green Chillies. Give it a nice stir, do not brown the Garlic and Ginger. just a quick stir and in this goes, finely chopped Onions. Alright, these Onions started getting a light brown. 

At this stage, we will reduce the flame a bit and first, add Turmeric to it, then Red Chilli powder and Coriander powder. Give it a nice stir. And in this, we add freshly grinded tomatoes. That is fresh tomato puree. We have to fry this masala nicely, till the oil oozes out. When oil oozes out it's an indication that tomatoes and onions have cooked nicely. To this, we add salt. 10 minutes have passed, we will turn off the gas.

 And we will, for at least 1 minute, leave it in this water. Let it be there, let it sit there. Now. We will take tap water and transfer the eggs in this, so that they cool off a bit. And we can peel them off easily. With that, it prevents any overcooking in the eggs. Let them sit there for a minute or two. And when they can be handled then we will break them.

Tap it and remove the shell. Next one. Eggs have been peeled. Now we will cut the eggs from the centre. and its yolk will go into the curry. This has 2 advantages; One, our curry will be thick and flounder. Second, the taste of the curry will get intense. So this is our yolk, which is perfect bright yellow. 


Just look at that. And this is our egg white. There is no silver outer shell or no outer colour comes on them. That means that it's a perfectly boiled egg. We will do that with another egg. This goes inside. Again, we will mash this up. Right now our masala is quite dry. But it is nicely roasted. Now we add water in this. 

We will let it boil, and keep it on a different flame, over here. In the meantime, we have this Egg White, we will finely chop them up. And this will also go inside the curry. Now in a fresh pan, we put in a little oil. And in this we will lightly fry the eggs. Just let them be in the oil for a while. 

Look at that, those patches of golden brown colour. Actually makes them a little tastier. And adds a little bite to the eggs. In the meantime, if you look at our masala, it is again quite thick, this is perfect. Alright, we will turn off the gas. And place this egg in this curry. Shift the pan.

 We add water to the pan again. Lightly stir it and allow everything to come together into a beautiful curry. Now we add our chopped egg white in this. To this, we add a little fenugreek leaf powder, chopped fresh coriander and give it a good stir. Beautiful. Bursting with flavor. 

Gas off. And now we plate it. First, we serve hot curry. And now we place the eggs in this. On the top we put a fresh sprig of Coriander And our Egg Curry is ready.
