Mutton Kofta Recipe

Hey, lovely readers, welcome once again to my site, Informative mind. And today we have a special dish to be learnt. Today we are going to learn the ultimate Mutton Kofta recipe for home. (Meat Balls).
We are using a chopper you can use a mixer instead. First we will chop these mutton well. After these have been chopped, we will add the minced mutton (Keema). We need to have washed and dried the Keema properly. These are roasted bengal gram (chickpeas) they are easily available in the markets.

We have ground them into a powder. The quantities of green chillies and red chili flakes can be adjusted by you as per your spice preference. We will finely chop all of these you can also use a grinder for this purpose We have prepared the mince for the Kofta. you will see that it is not very dry we do not have to keep it entirely dry. If they are dry, then the Koftas will turn hard that is why we have to ensure they are not dry.
They are neither too soft, nor very hard if the mince is hard, the Koftas will turn hard too. If you feel the mixture is hard, add 1-2 tsp water and soften it as shown here. You can keep it aside for half an hour or directly prepare the Koftas. You can decide the Kofta size. we will make Koftas of this size, the size of a lemon. Oil should be heated next.
Now we need to lower the flame. Make sure that they are not to be fried till brown (like that of Kebabs). Fry them gently till they are slightly golden. If their colour changes to brown/dark brown, they will turn hard and not taste good this has to be taken care of.
We have to fry them this way do not fry too much, only fry for 5-6 minutes at low flame. Remove them on a tissue paper. Let's prepare the Kofta gravy. We can also used ready-made fried onions here you can use 2 medium sized onions instead and fry them; crush them in this way. We have used Kashmiri red chili powder that is not very spicy if you are using the spicy one, then add less.
Now mix everything properly. 1/2 minute later, add ginger-garlic paste. Lower the flame and saute the paste for 1-2 minutes. Add the prepared mixture maintain the low flame. Put 1/2 cup water in the emptied mixture bowl and add it to the gravy. Mix everything properly and increase the flame. Use a high flame and stir it continuously.
as we do not want the curd to spoil. After sauteing at high flame for 1-2 minutes, we have lowered the flame. Cover and let it cook for 5-7 minutes at a low flame, and check once in between. 7-8 minutes should have been passed. we need to check it once the mixture has cooked well.
In this way we have to cook the mixture properly. We are adding 1 full cup water which is 250 ml water. We have increased the flame. This Garam Masala Powder is home-made one. Do prepare the Masala at home. When there is a good boil in the gravy as shown here, add the Koftas one by one Cook at high flame for a minute and then lower the flame.
Cover and let the Koftas cook for 8-10 minutes, maintain the low flame. Atleast 10 minutes should have passed. By this time the Koftas should have turned out great. The gravy too should be prepared well. We will not keep the gravy very thick so that we can have it with Naan or paratha (flatbread) or rice also.
Any gravy that is kept aside for some time after turning off the flame it gradually thickens automatically so turn off the flame at this point and serve it with potato wedges and green coriander leaves.
