Chicken Fried Rice
The Process:
Take a small bowl and break the eggs into the bowl. Beat the eggs with a fork. Then add salt as per taste into the chicken pieces. Add a tablespoon of red Chilli, a teaspoon of Coriander powder. Add 1/4 teaspoon of cumin powder, 1/2 teaspoon of garam masala powder 1/4 teaspoon of turmeric powder, a teaspoon of ginger- garlic paste. Then add 2 tablespoons of beaten egg to pieces.
Mix all the ingredients well with hands until combined. Mix all the ingredients well, chicken pieces will be soft due to the egg yolk. Then add 1/2 tablespoon of pepper powder and mix it well. Now marinate the chicken for half an hour marinade adds flavor to foods and makes them more tender.

Now take another bowl and then add Basmati rice into it. Wash the rice 2-3 times with water Now soak the rice for half an hour in water. When you let the rice soak the grains expand. After 30 minutes switch on the stove and heat a vessel. Now Pour a litre of water.Then add enough salt to the water, then cover the vessel and allow the water to boil.
After 4 minutes remove the plate and then add a tablespoon of oil, mix it well. Rice grains won't stick due to the addition of oil. Then add soaked rice into the boiled water Now stir it once, cook the rice in high flame. Don't do over mixing while cooking the basmati rice. Adjust the flame to medium while cooking the rice as shown in the clipping. Just stir the rice once while boiling. Lightly stir it once.
Mix it well until cooked evenly. Rice grains are expanded, boil it till 95% of the rice is done. 95% of cooked rice is enough to prepare the fried rice and switch off the stove. Now shift the cooked rice to colander to drain the excess water. Now transfer the cooked rice to a plate. Then allow it to cool.
Allow it to cool completely such that the grains won't stick. Meanwhile, let us start preparing the chicken fry. Now switch on the stove and heat a non-stick pan. Then add 4 tablespoons of oil and heat it. Meanwhile add cornflour to the pieces and mix it well. Chicken pieces will be crispy due to corn flour, then slowly drop the pieces into oil and fry them.

Fry them evenly Don't cover the pan, don't cover the pan while frying the pieces. Adjust the flame to medium whiling frying the pieces. You can see the omelette texture while frying, which is due to the egg. You can deep fry the chicken instead of shallow fry. Chicken pieces will be crispy in nature due to deep fry. Fry the pieces according to your wish.
Chicken pieces won't absorb oil while doing shallow fry It may take around 10 minutes to fry the chicken pieces. Fry the pieces as shown in the clipping and then switch off the stove. Then transfer the pieces to a plate. Now switch on the stove and heat a wide bottomed vessel and heat it. Then add 6 tablespoons of oil and heat it. Then add chopped ginger and garlic pieces into the oil.
Fry them well in oil Adjust the flame to low. Then add finely chopped beans, carrot and cabbage. Also, add white spring onions. Fry them well. Fry them evenly under medium flame fry them till texture changes to dark and crunchy. Now move the veggies aside in the pan and then add beaten egg. Fry it well. Fry the egg separately and don't mix with vegetables. Now mix all the vegetables with the egg fry.
Break the egg mixture into small pieces, so it can mix with rice evenly. Generally, 2 eggs are sufficient for 300g of rice. You can add eggs accordingly, then add salt as per taste. Then add 1/2 tablespoon of red chilli powder and pepper powder. Mix all the ingredients well. You can adjust the quantity of red chilli powder and black pepper powder. In Chinese style fried rice red chilli powder is optional In order to increase the spiciness in chicken fried rice, we are adding red chilli powder Fry all the masala spices well.
Then add fried chicken pieces into the vegetable mixture. Mix all the ingredients. Now add cooked basmati rice into the mixture. Mix all the spices well by flipping up and down. Now mix it with a spoon lightly. Don't over mix with spoon, mix it by flipping up and down. Then add a tablespoon of soya sauce, red chilli garlic sauce. Add a tablespoon of red chilli sauce.
Also, add finely chopped spring onions. You can also add half tablespoon of black pepper powder. Mix all the ingredients well by flipping up as shown in the video clipping don't apply force while mixing with spoon. Then add a tablespoon of Vinegar to the rice.
Mix it by flipping up mix it well and then taste it once to check the salt level Fry the rice under low flame Fry it for 2 minutes and then switch off the stove. Tasty and spicy chicken fried rice is ready to serve. Garnish the chicken fried rice with onion rings and lemon slices. Serve hot with chicken curry
